A recipe to be shared….

Good morning!

 You know that recipe that you just can’t seem to stop making? The one that comes out weekend after weekend, day after day? This is mine, and it is worth sharing!

These aren’t your typical muffins (the kind filled with empty carbs, leaving you anxious for lunch at 10am). These are DENSE and DELICIOUS and all together WONDERFUL! I’ve experimented quite a bit with the “add-ins”, and I have yet to find a combination that I didn’t like.

Here we go…

1 ¼ cup flour
½ cup brown sugar (not packed)
½ tsp salt
½ tsp baking soda
¼ tsp baking powder
3 tsp applesauce
2 eggs
3 ripe bananas
1 cup uncooked oats
Chocolate chips
Mix dry ingredients, add oil and eggs and mix together.  Add bananas, oatmeal, chocolate chips.
Fill muffin tins half to three quarters full and bake approx 20 minutes at 350 degrees. 

Chocolate for breakfast? Yes please!

These are muffins that take well to experimentation. I will usually add about a half bag of semisweet chocolate chips, but I have also added chocolate chunks and was just as happy. Also try adding coconut, walnuts, pecans, dried cranberries, raisins…the possibilities are endless!
